I also add the turmeric in at that first stage. My father inlaws a chef and told me it takes the ' raw meat' smell away from the meat. We also add the ginger & garlic right as the start and fry it off a little before adding the onions and all the other things. Then add the rest of the spices to the meat. It could just be different ways of doing things depending on what region of Bangladesh/ sylhet you are from, like I am from Beani Bazar and we all tend to cook it the way I do. Oh sis my mouth is watering, that is mine n my family’s ultimate favourite curry🤤 also i used to cook meat like you before but then learnt allot of people cook meat or beef where you add the spices at the beginning with everything n it tastes really good. Just bung it all in n let it do it’s thing , so I always do tht now

I was once really short on time amd added all the ingredients meat/onions/gingergarlic and the moshla together added abit of water and cooked it on medium heat it turned the best. It was so nice because moshla cooked for longer

Adding turmeric earlier on in the cooking process helps get rid of that gamey meaty smell and taste in the meat. My mum tends to do this and now I do the same.

Instead of sugar you should or can use honey. Make them without sugar and then add honey for taste. They will love it because sugar especially white is dangerous for kids. Not healthy at all.
