I just cooked some filets for my wife and I, about 1" thick, for an early Valentines Day lunch, as we will have contractors working in the house tomorrow and followed this recipe with the exception of having the herbs, I was out and not much of a selection in the stores. I have been cooking for over 45 years and this is the absolute best steak I ever cooked, my wife was smiling while she was eating and they teared up, I asked what is wrong and she said I am finished with my steak. This will be my go to from now on. Normally cook ribeyes on the pit, no more. Thanks for sharing your recipe. THE BEST STEAK I HAVE EVER COOKED!!!! I've had steaks at Emirils in New Orleans, paid $70 for a filet and what I just cooked is 20X better

Didn't even use the cast iron and it came out perfect.

Don't get too sucked into the cast iron hype. Stainless will also do very well for most steaks. I'd actually argue that cast iron is often too harsh for filet.I'd rather use it for steaks with more mass like ribeye or new york.

Bruh, my first attempt at cooking was in 1975 when I was 5 years old. That didn’t end well because I was 5, and ended up scolding my chest with a pot full of boiling water. I said that to say, I ended becoming a Chef, doing my apprenticeship under a Master Italian Chef at the Stouffer Renaissance in Austin Texas during the early 90’s. I’ve worked 10’s of thousands if not over 100 thousand hours in kitchens. Everything from Mac Donald’s to 5 Star restaurants, catering, pubs, hotels, casinos, and even worked as Chef Manger on billion dollar oil production platforms. I said all that to say, burnt anything is crap, and you never ever sauté garlic in the skin. I appreciate your enthusiasm for cooking but you have a lot to learn my friend.

In regards to salt... mineral salts(NaCl) doesn't dissolve in organic solvents, such as any cooking oil. Thus, i'd suggest at least to season it with a salt first, prior to applying the oil. In a such way, it will penetrate deeper and will have a smoother taste. The rest is perfect. Great job! And.... it's 2.30 am - i am walking to my fridge coz of u😄

I appreciate a guy that clearly knows what he is doing, cooked a beautiful fillet mignon and told it like it is.
