I worked Wednesday and Thursday making turkey bone broth in a big roaster. I ended up with 7 qts of canned broth and enough left over for two bowls (meals) of homemade ramen soup. So proud of myself.

My husband and I keep a large-ish heavy duty wicker basket w/ a sturdy handle in the kitchen so we can carry snacks, drinks, glasses, etc…up and down the stairs to our bedroom. It’s so handy to only need one hand for the full basket and a free hand for the railing. You may want to source something like that for those back-and-forth trips to the outdoor kitchen. ❤️ My mom always said….old age ain’t for sissies. She was right. 😂

That's such a useful tip. Can you believe it, I have such a basket and I've never thought to use it to carry things to my outside cooking area. Doubly silly of me as I'm often having to use a cane due to arthritis. Thanks for waking me up 🙂

Thank you both so much. I am amazed at all you do. I'm in Dorset England and I got a presto canner a month ago. I nearly returned it because the cost of jars here is ridiculously high. But we have decided that this is something we can share with family. I didn't know what to cook today so I took a jar of plain chicken that I canned 2 weeks ago and made a delicious meal. I keep saying to my husband how marvellous you are and tonight I heard ' you're not so bad yourself'!!!

@@artemisfowl66 I know it's pricey normally, but I stock up with Kilner when they have their big sales throughout the year. I think it's buy 3, get one free. And then there's additional discount codes that come through the email club too regularly. Combine the two and save! Nothing compared to cheap USA canning prices, but it's a start. The new fresh lids are the most important for the pressure canning IMO. 😇.

Happy Saturday, it’s always something I look forward to, seeing your. Saturday videos. And this is a good one. I also suffered a bad heat stroke about 30 years ago and so totally relate. When I use to be a chef, the heat was unabearable at times. We had to wear traditional chef uniforms and we found if u keep your pulse points cool it helps cool your whole body. So we used to wet down our bandanas and tie them around our necks and it really worked. Also running cool water over the inside of your wrists help too. Anyways, sorry I was rambling. But I know how horrible heat strokes are. Really great video you two. Cheers 🇨🇦🌷

Both meals look delicious, and thank you for sharing them. One thing I would do differently is make a gravy out of the chicken oil/ghee. My grandparents would have smacked my hand if I threw that away! They taught us all to live by Depression era rules. I'm really enjoying watching your videos.

I am absolutely delighted to watch you experimenting with cooking off grid esp today on your rocket stove. Helps us not be hesitant to use this piece of equipment. I am not looking forward to such a situation, as none of us are, dealing with full time cooking. When we went tent camping for weeks at a time years ago we spent a great amount of time thinking thru every scenario that could happen and preparing for it. As a result we really enjoyed our excursions with no worries so this works the same way. I am looking forward to many more off grid meals to learn from you and Jim. We all are so grateful for your goal in sharing what you learn. You are in the right place with all of this and at the right time!

I think if you put the chicken in while orso is cooking - it will ensure it is fully cooked and the chicken with absorb some the flavors.

As I’m sitting here my air conditioned apart moment, the food looks delicious! But if the grid was down, and it was 108 degrees outside, I wouldn’t want hot soup. But if food was scarce, I imagine we would be glad you any food. I van just see my little darling 1 year old great grandson opening his little mouth and eating every bite of the good food. He wouldn’t care if he was hot or not! So good for little tots of children! Thank you!

Fun to watch today, I just ordered my Eco Stove and I am super excited to use. We just had a big wind storm last night so I ran around and collected the twigs to use when my stove comes! One thing we could remember, when we are in a grid down situation retaining the fat will be important to max calories and we all know our brain needs fat😊

Prayers to you Pam. I am very sad to hear about your heat stroke. Nothing equates with anyone other thing, but you and Jim are saving lives with your work. I have the luxury of having been around good folks who lived through the Great Depression. This generation has no idea of the freight train coming down the road at them, which saddens me. But you and Jim are filling in a gaping hole that will save lives. Thanks for many living and those yet unborn for your hard work. As an historian, I promise those that pay attention to your teachings have increased their ability to survive exponentially. God Bless!

You know, even if we are never faced with being off grid, these recipes are wonderful to have in your arsenal. I was also thinking about younger families who might face such obstacles and these are things that could easily be used on a camping trip or even a faux camp trip in your back yard. When I was first married and we were having our first baby, we went camping until I could no longer go; then in less than two weeks after birth we were camping! My kids all have years of experience in living outdoors in various weather conditions and various ways of eating and cleaning up. I hope young people will teach their kids some of these skills. We never know when we truly might need to survive as best as we are able. Thank you Pam and Jim.

I don’t know if u all have already done this, but I have never camped as an adult. I would like information from what to burn in grid down situation, how to set and light a fire, and how to adjust to reduce or increase temperature and keep it going if starts to burn out - and how to estimate or know what temp is - on outside cooking - fire, grill, rocket stove. I presently cook on a charcoal grill, but it’s a joe junior, and is nothing like a real grill, fire or stove. TFS!

I shall definitely be trying these. I learn so much from you, things that I had not even thought about. I think now that if everything goes down and my back is against the wall, I will not panic, I will just think "OK, what does Pam do" and I will be able to find my way out of my darkness. Sometimes I miss my late mother so much, I miss being able to ask her for help and advice. Now I am able to get so much helpful advice and guidance from you it has filled a little of the hole she left. Looks deeeelicious! 😋 Thank you for the wonderful ideas! I have had a few heat strokes when I was a teen & also in my 20's. No one knew the dangers of heat strokes back then. Now, in my 60's, I have a terrible time in the heat & humidity. I love the outdoors, but it's been quite difficult to enjoy. You must be strong as an ox! My great grandma used to soak raw chicken in brine before cooking. It draws the blood out.

I processed 2 chickens and made my chicken broth. I tried the chicken soup recipe and added the same extra spices you did. Oh my goodness, it was the best chicken soup I ever had! Can’t wait to try the other recipes!

Loving this series. I’ve started collecting manual appliances. Even found a shedder/slicer than is manual. Tested it and it works great! Is it heavy duty? No. But it’s perfect for camping and no power situations. It’s amazing how many devices we have that depend on electricity. I have portable power stations (with solar panels) and even power bricks that have a solar panel right on top (sits on my car dash) but that powers the essentials. I try to camp off grid whenever possible to continue testing. In my camper van 🚐, 😉.

I appreciate you braving the extreme heat to show us how to do this off grid. Please take care though first of all. A cool damp bandanna around your neck would be helpful I think out there or in the garden. Have a cold bottle of water to re-dampen it and wring out. Both dishes look delicious. Thank you so much!

Due to your channel, i have taken up canning as another string to my bow. As a prepper, I became a sub as i was taken by your vid on feminine hygeine bug out bag, although at the time, i mentioned that my partner wasn't really taken by the prepping way of life, however since then things are very different and she is well on the way to seeing the need to give thought to the future, God be praised. Pam, since the heat affects your health have you considered one of those personal, around the neck AC units? Especially cooking over a hot appliance in the heat! 💔 In an emergency it would help you regulate and maybe prevent future heat strokes 🙏🏾 There's the initial cost, but some are ac units and heaters in one device. For people at risk, that is more than just a luxury if it saves their lives ❤❤ This might be a benefit to both you and Jim ❤❤ One is called the "Coolify 2 Neck Air Conditioning." Would you mind considering this? 🙏🏾 Love your channel an I appreciate all that you and Jim do. ❤🙏🏾❤

So love all the information that you give us. My youngest daughter is getting married in September and is wanting to learn how to can. I have over 50 years and I have learned so much from your videos and how much simpler you make things. I have not ever used a pressure cooker so I bought one so that we can put up something besides fruit. I so enjoyed your info on the USDA book and the Ball Canning book that I ordered them for myself and a set for my daughter plus a beginning canning kit for my daughter as a bridal shower gift. She will be thrilled with them. I'm anxious to download your chicken booklet as I watched you cut those up a few days ago and set them aside for all those meals. I enjoyed this video very much. We have a rocket stove like yours and enjoy experimenting on how to use it. I'm going to make the recipe you just did and add it to my foods. We have found using charcoal in the stove gives us a more even and longer lasting heat, as long as it is available. In this heat this week we are only cooking in our outside alternative ways. As a new subscriber I look forward to watching your earlier videos to help me along my way.

I appreciated your comment about the trials of getting the rocket stove to not smoke and send off soot. I used mine for only the second time. The black smoke just kept on coming. Cleaning my cast iron skillet and tea pot were a mess. I had soot on everything and on me! I think my problem was my fire starter that had some petroleum product in it. My wood was very old and dry. I live in the Pacific Northwest and hour west of Seattle. The wood I can forage from my forest is alder and Doug fir. Next cooking attempt will be with only paper and dryer lint as tinder and the same dry wood. A video on how to build and maintain a fire in a rocket stove would be helpful.

If you add some type of 'bread' to your soup I think you can get four meals from that pot, especially if you use it as 'lunch side' or as a companion to another dinner because then you don't need to have bowls full of it to eat. If nothing else, two meals and a cup full left over for a lunch.

One way to save money for people new to off grid cooking is shopping estate sales and garage sales. I have found almost all of my cast iron pans that way for cheap and they are already seasoned. Please be careful in the heat. Love the video and dedication to authenticity, but stay safe for you!
