Here’s how I Cooked a Whole Ram and Nigerian Smoky Party Jollof Rice for My Family at the just concluded Eid (ILEYA) Celebration. It is always a good time with family and friends and Ileya is one of the few chances my family has to get together, so I try not to miss it.
Please see ingredients list and measurements below.
FOR THE MEAT;
4 litres of vegetable oil (for frying)
About 3 tablespoons curry powder
About 2 tablespoons dried thyme
About 20 seasoning cubes (please taste and adjust as you go)
6 large onions, 3 medium sized ginger and 10 cloves of garlic, all blended together for seasoning meat
Salt to taste
JOLLOF RICE
About 10kg short grain rice (4 congos or 8 dericas)
1 litre vegetable oil for cooking jollof rice
5 litres of pepper mix containing tomatoes, red scotch bonnet, cayenne, red bell peppers, onion, ginger and garlic
1 derica size tomato paste
5 litres meat broth
water
2 large onions (chopped)
Seasoning cubes to taste
3-4 tablespoons margarine
2-3 tablespoons curry powder
2 tablespoons dried thyme
Salt to taste
