What's on the menu this month? Cheesy Meatballs!
Ingredients:
-400grams meatballs
-500grams pasta sauce
-1 brown onion (finely chopped)
-175grams mozzarella (1/2 grated & 1/2 cubed)
-1 tablespoon balsamic vinegar
-2 teaspoons olive oil
-1 bunch basil leaves (chopped)
Recipe:
-Preheat your oven to 180°C.
-Flatten meatballs one at a time, put cube of mozzarella in the middle, reform meatball around the mozzarella.
-Put 2 teaspoons of olive oil into a fry pan, add the meatballs and keep turning until browned (they don’t need to be cooked through at this point). ------Remove meatballs from the pan and set aside.
-Add chopped onion into the hot pan and cook for 2-3 minutes or until softened.
-Add a tablespoon of balsamic vinegar and cook for 30 seconds.
-Add the pasta sauce and 1/4 cup of water. Reduce heat and simmer for 3-4 minutes.
-Add the chopped basil and stir through.
-Transfer the mixture to a baking dish and add the meatballs back in.
-Bake for 10minutes or until meatballs are cooked through, remove from -oven, top with the remaining (grated) mozzarella and then return to the oven for another 5 minutes.
Serve and enjoy!
Serving Suggestions: Serve with couscous, pasta or crusty bread.
Additions: Make it your own - Add fresh or dried herbs of your choice. Bulk it out with some extra
vegetables.
