Italian Sfingi
These sfingis are like little pieces of fried dough or doughnuts, dusted with sugar and delicious served warm. In our home it has a been tradition to serve these on Christmas Eve after midnight mass.
Dough
1 tsp salt
½ tsp baking powder
3 slightly beaten eggs
2 Cups warm water
Mix all the ingredients together until elastic and a bit sticky. Water and flour can be added as needed.
Let the dough sit and rise for about ½ hour and doubled in size. I put a towel over the dough and put it in the oven with just the light on (without turning the oven on).
You will need approximately 2 cans of FRESH Crisco for frying
When the oil is hot begin dropping bits of dough into the oil. The sfingi will brown and flip on their own. Remove with a slotted spoon and sprinkle with granulated or powdered sugar.
