Come join Zelda as she shows you how to make a Kiwi classic, and one of her favourite things to cook - Sweetcorn Fritters!
Here's the recipe from the Edmonds Cookbook, though do note that in the video Zelda made a double batch:
3/4 cup plain flour
1 teaspoon baking powder
1/2 teaspoon salt
black pepper
1 egg
440 g can cream-style corn
2 tablespoons oil
Sift flour, baking powder, salt and pepper to taste into a bowl. Add egg, mixing to combine. Stir in sweetcorn. Heat oil in a frying pan. Drop tablespoonsful of corn mixture into pan. Cook until golden then turn and cook other side. Drain on absorbent paper. Serve hot.
Serves 4-6
