Caesar Salad Dressing
Makes ¾ cup (5 serving)
Ingredients
1 Garlic clove Minced
½ heaping Teaspoon anchovy paste
1 ½ Tablespoon fresh lemon juice form 1 lemon
¾ Teaspoon Dijon Mustard
¾ Teaspoon Worcestershire sauce
½ cup Mayonnaise
¼ cup fresh grated Parmigiano-Reggiano
¼ Teaspoon Salt and Freshly ground pepper to taste
You can add more or less salt according to taste
Instructions
Whisk together the garlic, anchovy paste, lemon juice, Dijon Mustard and Worcestershire sauce. Add Mayonnaise, Parmigiano-Reggiano, salt and pepper then whisk together until well combined. Taste and adjust any ingredients according to your liking. Refrigerate. Will keep in the fridge for approx 1 week.
Chicken Fettuccine Alfredo
Makes 4 servings
Ingredients -Chicken
2 boneless/skinless chicken breast or 1lb breast tenders
2 tbsp butter or 1-1/2 tbsp olive oil
1/3 tsp salt
1/3 tsp garlic powder
1/3 tsp ground pepper
½ lemon
Instructions
Melt butter/oil, add cut chicken, add salt, garlic powder and pepper, Saute’ for 5-7 minutes on high heat (depending how large the pieces are cut) squeeze some lemon juice over chicken, stir for additional minute. Turn off heat, cover and put aside.
Ingredients - Fettuccine Alfredo
1 lb Fettuccine Pasta
8 tbsp, 1stick
1/3 cup Dry White Wine (Optional)
1/3 cup Chicken stock
2 Garlic cloves Minced
1 3/4 - 2 cup Heavy Cream
1 ½ cup fresh grated Parmigiano-Reggiano
Pinch of nutmeg (optional and fresh grated preferred)
2 tbsp Fresh Italian Parsley (optional)
1/2 tsp salt (or to taste)
Freshly ground pepper to taste
Instructions
Start by bringing water to a boil in a large pot. Add salt to the water to season the pasta. Once it is boiling, add pasta and cook according to package instructions.
Melt butter then add the garlic and stir together until softened - about 1 to 2 minutes.
Add broth and wine let it cook to reduce for 5 minutes
Add heavy cream and let simmer over medium-high heat for about 7 minutes to thicken. Add salt and pepper to taste. Add the majority of your cheese to the mixture and whisk well until smooth.
Add cooked chicken and remove from heat after 1 minute
Toss alfredo sauce with fettuccine pasta remaining cheese saving a bit for your garnish. Once it is tossed, garnish with the remaining parmesan cheese. Add a little pasta water if it needs to be thinned out. I prefer mine on the thicker side. You also have the option to add more or less pasta depending on how saucy you like it.
Garnish with Italian parsley, if so desired.
Note- If you want to add mushrooms to this you can cook them with your chicken.
Mascarpone Cream w/Fresh Berries
Makes 4 servings
Ingredients
8 oz mascarpone cream
1 Cup Heavy Whipping Cream
½ Cup Powdered Sugar
1tsp Vanilla extract
Strawberries, Blueberries, Raspberries (or any berry combo)
Fresh mint (optional)
Cinnamon (optional)
Instructions
Whip the mascarpone, add the heavy cream and whip, add powdered sugar and vanilla extract,
Whip until stiff texture. Taste and add more vanilla or sugar to taste.
Layer your cream and berries in desert glass or small bowl.
Sprinkle a bit of cinnamon on top and garnish with fresh mint leaf
