By way of contrast, I remember a cafe in the west of Ireland in the mid-1960s, where the cheapest thing on the menu was wild Atlantic salmon! Cheaper than chicken or bacon.

Food looks excellent. Not a critique but you asked if we had recommendations on the cooking. Something to try when you cook garlic. When you saute the vegetables add garlic last before you add the liquid. When you smell the fragrance you add water. I think it makes a difference. Chef Jean Pierre KZitem channel is where I saw it. Keeps more fragrance in the food he claims. Maybe try it once. Great Channel.

I remember a bag of chips was 7 pence in the 70s. And a pint was 20 pence. And my mother would give us gibblets and coddle. For dinner ,And Mrs Burbridge gave us a skin head for 10 pence

Ireland in the 1970s was dog poor, and losing its population to emigration. There are NO ‘Good Old Days’ for Ireland to go back to.

Yum, that looks super delicious. A nice bit of fresh bread to lap up the gravy.. I like the idea of seering the steak first. We either velvet ours or use mince steak for an Irish stew. I made Guinness pot pie 3 weeks ago because i couldnt stop thinking about irish stew for several weeks beforehand 😅 Pssst, my son is a chef and gave me a good hint.. Save half a glass of the guinness and tipped in 15-20 minutes before it's finished cooking.. gives it the Guinness depth 🗝

A lovely looking and simple Stew. Would love to see you both do more Irish cooking. Bacon & Cabbage Colcanon Fresh Fish - Fried, Baked & Boiled Soda Bread Boiled, Roast & Mashed spuds And maybe some homemade everyday Croatian dishes too

All recipes I've seen have some dark beer as a main ingredient. Perhaps not necessarily Guinness, but that's likely the most available to most people in Ireland...

did you put speck in that stew?and garlic? my Czech BF upset me just putting garlic in it once(I asked him where he tought poor Irish people sourced that from when they made this first)...and guiness??I am sure it was tasty but just no...knorr stock pots are needlessly expensive too,a pack of 4 is like 5 euro,I can make my own stock from bones and veg I would just throw away anyway....also did you not put any spuds in there?? traditionally they would thicken the stew,granted it was the day after and you needed to put another spud in but that's tradition lol...and you put it with rice?listen this isn't goulash here that you can serve with anything ,you just stick it in a bowl and be lucky to get a bit of soda bread🤣again all that aside it looked very yummy...

so you know he was the best chef I knew,use to work in a michelin star restaurant and taught me so much about food...never could stand to see me hold a knife even chopping,possibly he felt personally threatened but I am grateful for everything he taught me...just no garlic in stew,I use to joke that he would put garlic in my tea if I let him lol...I miss his speck salad,just that type of fatty bacon with vinegar,oil and lettuce ,never could make that properly
