This may be one of the few English comments, but I really have to say this recipe is *outstanding!* I made these a few years back around 2017 or early 2018 when I was in a baking program working to get my certificate in baking and pastry arts, and everyone loved them! We did a test batch during the program's _"fry week"_ (the week when we were instructed on how to use the fryer and had to make desserts and other fried foods with it) and the instructor of the culinary department gave me a hug and said she brought one to her husband who loved them too! We then got to serve them for the lunch service (the baking program had a small stand off to the side of the culinary stations where we served desserts we made for other students buying lunch) and we included the blowtorching of the sugar on top to make sure they were fresh and people couldn't resist coming over to check out what me and my partner were up to with that torch haha. This is a phenomenal recipe and I will definitely revisit this when I want to wow people with an insanely delicious treat!
You are here making these extravagant meals and im just here microwaving a concauction of flour, water, and sugar to make a weird bread thing that tastes like fortune cookies.

I love the idea, here are some ways to improve this lovely recipe: - Custard doesn't need any kind of starch to thicken. - It's better to tempering the egg yolks with a little amount of the warm cream/milk mix before returning them to the pot in order to prevent them from cooking. - Seeds from a vanilla pod that infused into the hot milk gives stunning results. - Passing the bread flour through a sieve is a 0 lump guarantee and generally a good idea - Using vergeoise instead of cassonade to caramelise the top of the crème brûlée is a really savory alternative
