Crawfish Boudin is a Louisiana delicacy that has been around for many years! It is one of my favorite boudins. If you never had crawfish boudin then you are missing out. Make sure to give this recipe a try!
Crawfish Boudin
1 Cup Diced Yellow Onion
1 Cup Diced Red Bell Pepper
1 Cup Diced Celery
1 Cup Diced Green Onion
1 Tbsp Minced Shallot
1 Tbsp Minced Garlic
2 tsp Chopped Fresh Thyme
2 tsp Chopped Fresh Oregano
2 Tbsp Chopped Fresh Parsley
1 1/2 TBsp Cajun Seasoning (depending on salt content)
1 tsp Crab Boil Seasoning (Optional)
1 tsp Cayenne pepper
1 lb. Crawfish tails
Zest of half a lemon along with the juice.
2 cup cook long grain rice (or as much to your liking)
