This is the best chickpea curry I’ve ever tried! A delicious, one-pot comfort meal that’s ready in just 30 minutes! I’ve tried a variety of chickpea stews and curries over the years, but this is the one that I come back to over and over again.

CHICKPEA CURRY INGREDIENTS:
1 cup (220g) cooked chickpeas
2-inch fresh ginger
6 garlic cloves
1 large onion
1 cup (200 ml) coconut milk
2 tbsp coconut oil (or preferred oil)
1 bay leaf
1 cinnamon stick
1.5 cups water
Cilantro/coriander (as needed)
Salt and pepper (as needed)
