Beat the heat of this summer by having this yummy, creamy curd rice! Curd rice recipe has variants but this one of simple yet tasty! Try this out and let us know how it turned out to be!
Ingredients:
Cooked Rice - 1/2 cup (Preferably semi-boiled rice or puzhungal arisi)
Curd - 2 tblspn
Milk - 1/2 cup (as required to adjust consistency)
Butter - 1/4 tsp
Ginger - 1/2 inch (finely chopped)
Pomegranate - some
Coriander leaves - some
Salt - as required
For Tadka:
Mustard seeds - 1/4 tsp
Curry leaves - some
Red chilli - 1 no
Oil - 1 tblsp
Instructions:
Cook the rice by adding salt.
Smash the cooked rice when its hot.
Add curd, butter, and milk. Mix until it reaches required consistency.
Add pomegranate, ginger. Add salt if required.
Heat oil in a tadka pan and splutter mustard seeds, curry leaves & red chili.
Pour it over the rice and mix.
Creamy Curd rice is ready! Serve with Lemon pickle or papad or potato chips.
