Simple recipe to make good garlic mayo. 1 - Roast garlic pods. 2 - Crush them into paste. 3 - Take Mayonnaise and add the paste into it. 4 - Add Lil bit chilly powder. 5 - Mix well and ready. Note: You can add Salt etc if you think it needs it.

If you don’t trust your oven/what your roasting your garlic in do it at 350. It might take longer but the margin for burning it is slim. Looks delicious Kev!

I literally just roasted garlic and jalapeños (with seeds) saved my oil for frying eggs, and made compound garlic jalapeño butter. Outstanding let me tell you.

If ya make this with fresh cream instead of cream/yogurt that’s already sour/cultured it’ll last longer, I love cheese. But I see absolutely no point to sour cream/yogurt sauces, it’s cream…that’s been cultured our fermented. So storing that garlic yogurt based just won’t last as long vs a garlic aioli. Go garlic aioli and it’ll last TWICE as long in the fridge as a sauce/spread.

It has to be done with fresh garlic... Otherwise you'll end up with some wilting slightly rotted garlic mixed in with everything else.

I was thinking the same thing at first. With that much yogurt, I might add more garlic. Roasted garlic is so mellow and fresh yogurt can be overly tangy. Maybe the yogurt would overpower it. Maybe not. I guess I'll just have to try it and see and do my own experiments.

Kev is that white guy that uses salt and pepper on anything and everything, but he's also a lot more than that, he uses a lot more spices than just the two, and we respect him for both keeping alive a stereotype but also tearing it apart at the seams in the most beautiful way
