❂ Ingredients:
Fresh Salmon
Dill
Cream Cheese
Roman Lettuce
Red Onion
Avocado
Capers
For Crepes:
1 1/5 cup Flour
2 Tbsp Sugar
1/2 Tsp Salt
3 Eggs
2 cups Milk
3 Tbsp Vegetable oil
150 ml Boiled water
❂ Cooking process:
Lox:
⁃ Place the salmon in a container, place a sprig of dill on top and salt so that the salt completely covers it. Add 1 Tbsp of sugar, cover with a lid and refrigerate for a day.
⁃ Rinse the lox with water to remove salt, wipe, brush with olive oil and cut into pieces.
Crepes:
⁃ It is advisable that all ingredients for crepes be at room temperature. Break the eggs into a bowl, add sugar and salt, pour in 1 cup of warm milk and stir everything with a whisk.
⁃ Be sure to sift the flour and gradually add it to the milk-egg mixture, stirring with a whisk until all the lumps disappear. Pour in a second cup of warm milk and stir.
⁃ Gradually kneading the dough, pour a cup of hot water (boiling water) into it and add vegetable oil, stir.
⁃ Leave the dough for 15 minutes, then bake crepes.
Assembling:
⁃ Spread cream cheese onto the crepe, add lettuce leaves, then lox, red onion, sliced avocado and capers.
⁃ Fold the crepe into a cone shape and place it in the paper cone.
⁃ Enjoy!
