Crispy & Juicy Braised Chicken | No Water, No Sauteing
This braised chicken is super yummy, which is a must try. This is an old-school method of braised technique with no addition of water at all. Added with enough oil to get a soft and crispy texture to the chicken meat when fried.

With this waterless braising technique, it turns out that it really produces delicious fried chicken. Crispy on the outside and very juicy on the inside. The meat is also tender, soft. Here’s the recipe, I hope it’s useful.
Ingredient
The Main Ingredient
2 kg Chicken, cut to taste;
Tossed and Added Ingredient
1 tsp Pepper Powder;
1 tsp Broth Powder, optional;
4 Bay Leaves;
4 pieces of Kaffir-Lime Leaves;
1 tsp Turmeric Powder
1 tsp Cumin Powder;
1 tsp Salt.
Ingredients for the Ground Spices (Processed)
8 cloves of Shallots;
10 cloves of Garlic;
6 Hazelnuts, roasted;
2 segments of Ginger;
2 segments of Galangal;
2 tbsp Coriander;
3 stalks of Lemongrass, take its white part;
175 ml Oil for blending the spices.
