For the skin, no marinade with sugar bc sugar will burn quickly. Keep the sugar on the me meat side and minimal. Skin only needs salt to draw out the moisture, it should be scraped off before you start cooking. Alternatively if you have time, 2 days before you start you can dry the skin without salt in the fridge leaving the meat open skin side up, just give it more time to naturally dry out
