Today, by special request, we prepared our vegan and gluten-free version of the cookies that our grandmothers used to squeeze through the food processor. Crunchy, with sugar, with the addition of sunflower seeds.
Extremely simple recipe, and the cookies are very long lasting. If you don't eat them right away, you can confidently use them for several weeks making your morning coffee, tea, or second breakfast time more enjoyable. The choice is yours.

Quantity: 2 sheets
ngredients:
100 g of potato flour
50 g corn flour
50 g sunflower seeds
25 g of chickpea flour
25 g ground flaxseed
100 ml coconut milk
50 ml sunflower oil
50 ml water
3/4 cup brown powdered sugar
1 teaspoon soda
1 teaspoon vanilla extract
Coarse sugar for sprinkling
Method of preparation:
Grind the shelled sunflower seeds in a coffee grinder. Add them to the rest of the dry ingredients and mix.
Pour the oil into the bowl and mash the whole thing between your fingers so that the dry ingredients get well greased.
We add coconut milk, water mixed with vanilla extract. We mix everything together thoroughly or blend it with a blender to get a uniform, rather runny dough.
We set it aside so that the hay absorbs the moisture and the dough thickens a bit.
In the meantime, we prepare ourselves a cookie press, a spritzer or a confectionery sleeve, which can be replaced by a bag with a cut corner if necessary.
We set the oven to 180°C with thermo, and line a baking tray with baking paper. We fill the machine, spritzer or bag with the dough and squeeze out the cookies as desired. The thinner they will be, the crisper they will be after baking. We made oblong "ribbons" because it is easier to hold on to the sugar with which we sprinkle the raw cookies.
Bake for about 20-25 minutes, depending on how thick our cookies are.
If your cookies are quite thick and don't bake too much, it may happen that the dough in the center is greenish. This is a natural reaction of sunflower seeds combined with soda.
