Una crostata fresca e dolce al punto giusto. Una pasta frolla morbida accompagnata da una crema al limone e mirtilli freschi.

Ingredienti per uno stampo di 20 cm:
Pasta frolla:
250 g di farina
150 g di burro
100 g di zucchero a velo
3 tuorli
la scorza di un limone bio
estratto naturale alla vaniglia
un pizzico di sale
Lemon curd:
200 g di zucchero semolato
100 g di burro
30 g di maizena
3 uova + 2 tuorli
2 limoni
Preparazione:
In una ciotola lavorate con le mani il burro, tagliato a pezzetti e la farina. Aggiungete un pizzico di sale, l'estratto naturale alla vaniglia, la scorza di limone e lo zucchero. Unite anche i tuorli e lavorate gli ingredienti fino ad ottenere un impasto liscio ed omogeneo. Avvolgetelo nella pellicola e lasciatelo riposare in frigorifero per circa un'ora. Nel frattempo preparate il lemon curd. Spremete i limoni, filtrate il succo, aggiungete la scorza, la maizena setacciata e mescolate. Fate sciogliere a bagnomaria il burro, aggiungete lo zucchero e mescolate con un cucchiaio. Versate le uova e i tuorli, precedentemente sbattuti, e il succo di limone. Cuocete a fuoco dolce a bagnomaria continuando a mescolare finché la crema non inizia ad addensarsi.
Riprendete la pasta frolla e stendetela su un piano leggermente infarinato. Foderate lo stampo per crostate, imburrato ed infarinato, con la pasta frolla. Bucherellate il fondo con i rebbi di una forchetta. Cuocete in forno statico a 180° circa 25 minuti. Quando inizierà a dorarsi in superficie toglietela dal forno e lasciatela raffreddare. Versate il lemon curd sulla crostata e livellatelo utilizzando una piccola spatola. Lavate ed asciugate i mirtilli. Aggiungete i mirtilli sulla crostata ed ultimate utilizzando la gelatina spray sui mirtilli.
A fresh and sweet tart. A soft shortcrust pastry joined with a lemon cream and fresh blueberries.

Shortcrust pastry:

100 g of icing sugar
3 egg yolks
the zest of an organic lemon
natural vanilla extract
a pinch of salt
Lemon Curd:
200 g of granulated sugar
100 g of butter
30 g of cornstarch
3 eggs + 2 yolks
2 lemons
Preparation:
In a bowl, work the butter, cut into pieces, and the flour with your hands. Add a pinch of salt, natural vanilla extract, lemon zest and sugar. Add the egg yolks and mix the ingredients until you obtain a smooth and homogeneous mixture. Wrap it in cling film and let it rest in the fridge for about an hour. In the meantime, prepare the lemon curd. Squeeze the lemons, filter the juice, add the zest, the sifted cornstarch and mix. Melt the butter in a bain-marie, add the sugar and mix with a spoon. Pour in the eggs and egg yolks, previously beaten, and the lemon juice. Cook over a low heat in a bain-marie, stirring continuously until the cream begins to thicken.
Take the shortcrust pastry and roll it out on a lightly floured surface. Line the buttered and floured tart mold with the shortcrust pastry. Prick the bottom with the tines of a fork. Cook in a static oven at 180° for about 25 minutes. When it starts to brown on the surface, remove it from the oven and let it cool. Pour the lemon curd onto the tart and level it using a small spatula. Wash and dry the blueberries. Add the blueberries to the tart and finish by using the gelatine spray on the blueberries.
