Khichdi is a complete meal in itself. Made with rice and lentils, khichdi is healthy Khandeshi Masala khichadi is very popular in khandesh region of Maharashtra ( North-Western part ).This khichadi is blended with a special type of garam Masala called khandeshi garam Masala which is really spicy and authentic. People from khandesh usually enjoy this recipe in dinner. This khichadi along with kaddi makes a complete meal
How to male khichadi khandeshi style
Rice - 3/4 cup, washed and soaked for 30 minutes
Toor Dal - 1/4 cup, washed and soaked for 30 minutes
Onion - 1 medium, sliced
Garlic - 6 cloves
Desiccated coconut - 1/4 cup, lightly packed
Peanuts - 3 to 4 tbsp
Khandeshi garam masala - 2 tbsp (I used this recipe - Khandeshi Masala)
Turmeric powder - 1/2 tsp
Salt -to taste
Water - 2 and 1/4 cups or as needed
Peanut oil - 2 tbsp
In a pressure cooker or pressure pan, heat oil. Add in the onion and saute it till it becomes translucent and loses its raw smell. add in the khandeshi masala and turmeric powder. Stir constantly to prevent the spices from burning. Continue to cook it for 2 minutes till the masala becomes aromatic. Turn the gas back on and keep the flame on low if the oil cools off. When the masala has been sauteed, add in the ground coconut and garlic. Saute on low heat for 3-4 minutes, Add in the rice, dal, salt and peanuts and saute for 2 minutes. Sprinkle some water if the mixture looks too dry.
Now the sauteing is done. Add in the water and mix well. Add some coriander Close the cooker and turn the heat to full. Let the pressure build, then turn it to low flame and allow it to cook for 10 minutes. Alternatively, you could cook the khichadi for 2 whistles khandeshi khichadi is ready .
खानदेशी खिचडी बनवताना सगळ्यात आधी कढईत तेल गरम करून त्यात जिरं मोहरी कढीपत्ता लसुन यांची फोडणी द्यावी कढईमध्ये नंतर कांदे तांबूस होईपर्यंत परतावेत चवीपुरता एक चिमूट हिंग किसलेले अद्रक कढीपत्ता टाकावे. त्यानंतर १टमाटा,१ बटाटा बारीक चिरुन कढईत परतावे सोबतच शेंगदाणे खोबर्याचा किस परतून घ्यावा नंतर मसाला चटणी हळद टाका
एक वाटी तांदळाला 3 लहान चमचे चटणी २ चमचे गरम मसाला अर्धाचमचा हळद घालावी
मसाला चांगला भाजल्यानंतर पाणी सोडावे यानंतर तांदूळ आणि डाळ धुवायची आहे १ वाटी तांदळासाठी अर्धा वाटी डाळ घ्यावी १/४ तुरडाळ १/४ मुगडाळ १/४ मसुरडाळ घेतल्यान ऍसिडिटी कमी होते.साधारण ४ ग्लासपाणी खिचडी शिजवण्यासाठी वापरावे
पाणी उकळल्यानंतर धुतलेले डाळ तांदूळ गरम पाण्यात सोडावे आंधन उकळल्यानंतर चवीनुसार मीठ आणि कोथिंबीर बारीक चिरून टाकावी. साधारणपणे 15 ते 20 मिनिटे उघडल्या नंतर आपली कढईमध्ये खिचडी तयार होते परंतु तुम्ही कूकरमधे खिचडी करत असाल तर मध्यम गॅसवर तीन शिट्या कराव्यात. झाली खिचडी ३० मिनिटांत तयार.
