Ingredients:
For the Filling:
500g minced beef (or lamb)
1 large onion, finely chopped
2 carrots, diced
2 cloves garlic, minced
400ml beef stock (Backyard Chef used Knorr gravy powder)
1 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary (optional)
1 cup frozen peas
Salt and pepper to taste
Olive oil for cooking
For the Potato Topping:
1.2 kg (2.6 lbs) potatoes, peeled and chopped
100 ml (1/2 cup) milk
50 g (1/4 cup) unsalted butter
Salt and pepper to taste
For the Cheese and Breadcrumb Topping:
100 g (1 cup) mature cheddar cheese, grated
50 g (1/2 cup) breadcrumbs (preferably panko)
2 tbsp melted butter
Fresh parsley, chopped (optional, for garnish)
