Step-by-Step Preparation
Step 1: Preparing the Mangoes
Start by washing and peeling the mangoes. Cut them into small pieces and blend them into a smooth puree. If you prefer a bit of texture in your kulfi, you can leave some small mango chunks in the puree.
Step 2: Reducing the Milk
Pour the full cream milk into a heavy-bottomed pan and bring it to a boil. Once it starts boiling, reduce the heat and let it simmer. Stir continuously to prevent the milk from burning and sticking to the bottom. The goal is to reduce the milk to half its original quantity, which should take about 30-40 minutes. This process gives kulfi its signature rich and creamy texture.
Step 3: Adding Sweetness and Flavor
Once the milk is reduced, add the condensed milk, sugar, and cardamom powder. Stir well to combine all the ingredients. Allow the mixture to simmer for another 10 minutes. If you’re using saffron strands, soak them in a tablespoon of warm milk and add them to the pan now. The saffron not only imparts a beautiful golden hue but also adds a delicate, exotic flavor.
Step 4: Combining the Mango Puree

Pour the kulfi mixture into paper cups, filling them almost to the top. Insert an ice cream stick or a small spoon in the center of each cup. This makes it easier to enjoy the kulfi later. Place the cups in the freezer and let them set for at least 6-8 hours, or preferably overnight.
Step 6: Garnishing and Serving
Once the kulfi is set, it’s time to serve! To unmold, simply tear off the paper cup, revealing the beautifully set mango kulfi. Garnish with finely chopped pistachios and almonds for a delightful crunch. If you want to add an extra touch of elegance, you can drizzle a bit of mango puree on top before serving.
