Great stuff again. While following directions I'm finding that the cups are at a drinkable temp around 7-8 minutes after the pour. I'm using a temp controlled kettle at 205, preheating the cups, and monitoring temp. 150 deg F at 7 minutes, 140 at 8. Ambient temp in home around 70. By 15 minutes, the cups are just plain cold. My understanding is that after breaking the crust the "brewing" mostly stops, so prob just able to taste test earlier than the 15 minutes per instructions. Looking for advice or confirmation. Thanks!

Thanks for your question Michael. Our recommendation would be to try cranking up the temperature setting on your kettle all the way up to 212 F, so that the water is truly right off the boil when you start pouring. Starting at a higher temp should bring you closer to our in-house timing and extend your tasting time overall. I think the water temp adjustment will lead to an improved experience overall. But of course, at the end of the day, whatever temperature ultimately leads to the best cup tasting for your palate is the correct approach!
