Yes you are. I am white European and I've always loved flavourful spicy food. West African food and West Indian food are two of my favourite kinds. So much flavour. My friend is Jamaican and his mother cooks tasty Jamaican food and she always switches it up, very rarely the same dish more than once. I am trying to learn how to cook this food for myself, it's really interesting.

My great-grandmother was Jamaican and she taught me her way of making this. She did it the basic way because she didn't want to risk overpowering the dish with Scotch Bonnet peppers because she said it would make the dish inedible. Thank you Miss Debbie for showing me how to improve on what "Granny" taught me.

I'm American and made this dish for my Bajan husband and he loved it. It's so easy. I was nervous because Caribbeans use flavors and techniques I'm not used to, even though I consider myself a really good home cook. But, it turned out delicious. He loved it.

Ur healthiest choices r ur to decide. Many Native Africans brown chicken in oil also. I do it occasionally. I prefer to avoid cooking food in oils for healthier and leaner meals.

This looks like a real nice way to make curry jamaican style. How long did it usually take for the chicken to absorb the flavors of the raw seasonings before you take them off? Do you marinate it in the refrigerator overnight? Thanks for so many great recipes.

no problem with marinating the chicken, that way the seasoning will wok into the chicken

If you have the time to marinate it overnight that's better. However with Jamaican natural seasoning, once you really rub it in you will get the flavour just as lovely :)

This is the best way to brown chicken! No browning needed. It gives the chicken a nice texture and taste🤗🤗🤗
