I bought a center cut pork loin on sale yesterday ($18 @ 1.69/lb) and had them cut it in thirds--thinking I'd crockpot 3 roasts. I got home and realized just how much meat I had! So I searched on how to cut a pork loin and found this...outstanding. I ended up with a roast I'd already started, two smaller roasts (I'll probably combine as one) and something like 16 center cut pork chops (one of my favorite meals). Thanks Dr. BBQ.

Good Job!!!!! I usually cut up a bunch of pork chops and some thicker ones to Tenderize and make Tenderloin Sandwiches out of.

Awesome! Thank you so much for the wonderful, creative, and useful cuts! And the not overcooking them tip: so very important! I always get the entire piece at Costco: a real bargain! Thank you sooo much. :D P.S.: For those who like miso, I make a butter miso, at home, and spread on top of the chops while they are still hot. :)

i like all the ideas...............how about a chunk for the slow cooker? What if we want to freeze half of it for later? How would you package that to avoid freezer burn? Love your coat and black gloves! Thanks for posting!
