It's cultural difference. Japanese people like to wait in lines. It shows that the food being served, goods being sold, etc. are top-notch, high quality, or in demand.

Its so simple ,this is true Japanese Style.:-) Keep honest price and best quality(Over table is decrease quality) Then many people will repeat this ramen shop...

I don't understand why people are willing to wait 3 hours before store opening just to eat. Why the owner not increase the price to reduce demand or add more space to accommodate more people. /sigh

Also, most of these establishments are run by one to a few people. They can't feed hundreds of bowls of ramen at once. Places like these often run out of ingredients before the day is over, as well. They produce hand-made, quality bowls per serving. Not like in FAT America where it's all about the low quality mass production and consumption. I'll wait three hours for quality and taste anytime in Japan before getting served crap sushi from America.

I'd rather pay $50 for a really good ramen *without waiting* rather than $10 but I have to wait 3 hours. Or maybe pay someone to wait in line for me. Anyway your response doesn't really answer my question. They could have add more workers, expand branches, etc. Who said that hand made high quality ingredients need to be produced in slow manner? Anyway to each his own. I'm not going to respond further.
