SHORTBREAD:
2 eggs
100 g sugar
90 g seed oil
8 g baking powder
350 g 00 flour
METHOD:
Place the eggs, sugar, oil and yeast in a bowl, mix and add the flour a little at a time, mix until you obtain a homogeneous mass. You don't need to let it rest in the fridge.
FILLING FOR THE TART:
1 kg of apples (net and raw weight)
50 g granulated or raw sugar
the grated peel of 1 orange
100 g raisins
40 g hazelnuts
40 g pine nuts
40 g almonds
100 g orange marmalade
METHOD:
Peel and cut the apples into small pieces, place them in a pan together with the sugar and orange zest, cook over a low heat for 10 - 15 minutes with the lid on until the apples begin to be quite soft but not mushy.
Remove the lid and raise the heat for a few minutes to dry the fruit. Coarsely chop the dried fruit, in a bowl mix the jam, dried fruit and cooked apples.
PUGLIAN PANZEROTTI:
350g flour
150g re-milled durum wheat semolina
12g fresh brewer's yeast (or 6 g dry yeast)
20g salt
20g olive oil
300 ml water (or whole milk)
10 g sugar
FOR THE STUFFING:
700g tomato pulp
500g mozzarella or cheese of your choice
50g grated cheese (optional)
salt to taste
pepper to taste
fry oil
