Lisa, use maggi noodles for the bun. From all my experiences during the tiffin breaks, I can vouch that they are the perfect noodles for this job. Just cook them how you cooked these ones and let them cool for about an hour or so, if you don't prepare beforehand, and I gurantee you that they'll turn into a slab of noodles.

For your buns to hold the shape try adding all purpose flour while cooking the noodles and a pinch of salt so that when you put it in pan the flour will fry/cook a bit and it will keep its shape . I tried it whlie making maggi pizza to hold its shape and it worked really well. 🤗😊

Mỹ Suggestion: before putting the ramen in the mold, you should mix some beaten egg with ramen to bind the ramen and keep the ramen buns in shape. The ramen will turn crispy just like crusty French bread, as long as you have firm not mushy ramen.

I was doing my Bachelor's at a remote location where we did not have access to cake shops. We would literally make a birthday cake out of Maggi noodles exactly like this. You needed to add a beaten egg to the noodles to help them keep their shape. The egg in the buns basically cooks on the pan for more solidity.

Day 7 of asking Lisa to try this ramen recipe: fry minced garlic in a pot and then add a LOTS of chilli flakes/powder stir fry a bit and then add diced half a medium sized tomato without the skin and then stir fry for a bit and then add a bit of water so that the tomato can get kind of squishy then mash the tomato with a spatula or some kind of masher and then add a 1.5 cups of water and add quarter cube of a chicken stock. Then add salt to your taste and a bit of sugar. You can add a bit of ketchup too but it's totally up to you :-) Let it simmer then add the seasoning from the instant ramen and after that add the noodles, you can add sausage and egg. After the noodles are cooked it's done! BOOM! You got a bowl of SPICY Tomato-y ramen 🍜 i know it's a lot but trust me it's worth it!

Next time add little bit of dry cornflour to ramen while cooking so it will give cakey consistency to the noodles or before frying coat them in panko or cornflour. It should help them bind. Panko is better because a little less cooked breadcrumbs are better than uncooked flour. All the best, and thanks for the idea I am gonna try it.

A good way to keep noodle buns together is to: Cook the noodles. Shape in square pan Freeze/cool for structure. Cut squares, like brownies. Bread and fry. Then assemble burger. This creates "buns" and the noodles stay together within the fried breading. Double dredge is the best to keep sturdy with your favorite breading. "Not practical" for sure

I have never tried this before, but I DID make a bun/pancake like thingy out of noodles before. Next time try using less water and slightly undercook them, since they loose structure, when they become soggy. ALSO add an egg before frying. That added moisture 1: cooks them and 2: adds the stability you need. Yes, you won’t have this satisfying runny yolk, but you’ll have pretty good buns ☺️
