I am Danish and have been eating cheeses like this since early childhood. Here we just spread a generous amount of it onto bread and eat it like any other spread like jam or Nutella.

I think the Castello Danish Blue is my all time favorite. I was going to get on here and complain about it being $5.00 for a little slice, but now that I think about it if it was cheaper I would probably eat way too much of it! Lol

I absolutely love that cheese. One of my favourites. By the way, because it is imported, AUD$ 5 for that package is more than twice than it costs in Europe. You can buy it for about 1 GBP in UK.

I’m enjoying a block of this tonight. It’s a very sharp and crumbly cheese and the blue has a lovely pungency and flavour. Very happy with it.

I love this little cheese , it is great tasting and fairly inexpensive in Europe, around €1.20 . I generally alternate between this and Bleu d'Auvergne. Castello also has a creamy version which is very similar in taste to a Vernieres Roquefort. Great stuff all around.

Didn't know this was a thing outside of Denmark. I think it's this strong because we, as the rest of the Nordic countries, are really into strong salty stuff like salmiak liquorice.

I must be the odd one out because I am often unhappy that Catello isn't strong enough - I haven't found a blue yet that was too strong. To me Castello is just the strating point - other blues are weak usually. Chaussus and St. Agur (sp?) are good contenders.

This type of cheese is called "Danablu". You should've gotten a St. Clemens one, I really liked their "Mycella" when I worked there: st-clemens.dk/en/blue-cheeses/ - of course, I imagine in Australia one has to be a bit lucky to find cheese from smaller dairies like Klemensker dairy. Danablu is one of the few cheeses we make in Denmark with a lower pasteurization temperature at 60ºc/60sec (I think it was 60 seconds, but I'm reading on the internet it can go as low as 15 sec. which is standard pasteurization time) and that is done to preserve some enzymes important for aging the cheese. We're otherwise strict with pasteurization in Denmark, which is why we're known for making milder cheeses like havarti and danbo because we don't make cheese from raw milk, which lessens the taste profile quite a bit.

You can use it with heaps of stuff. Try it on italian style thin crust pizza, a burger thing, in subway style sandwhiches, with ham its bound to be amazing, especially more salty ham, great umami addition to any salad calling for it, tomato salad, red onion, olive oil, mix it up with other more neutral white cheeses for that if it's too much. Same goes everywhere if it's too much, or you could use sour cream/creme fraiche. Black olives. Goes into dinner style sauces at the end of the cooking time for a creative fusion. The list goes on. Use it to spice things up, or perhaps a little bit like you'd use a soy sauce? I don't know. Try it with beer, regular or dark ales are fantastic. Pear is a classic mentioned on the packaging as well.

Try it with butter on the bread/biscuit - a slice of Castello Danish Blue and a little thin slice of raw onion on the top, so delicious.

Used to be called Danebleu, 'Danish Blue' in sort-of-French. By the way, you're meant to take off the bell, leave it on the black base, so it's easier to handle and put away after you take what you want.😉

Try Gamalost! (lit. Old Cheese) it is a traditional Norwegian cheese. It contains 50% protein and only ca. 1% fat. It is unfortunately very hard to find outside of Norway.

LOVE LOVE LOVE it. My father was Danish. THIS IS REAL Blue Cheese. You don't need huge hunks, it is best savored. BUT that said, I can eat one of those packages alone in an evening. YUM ... I thought you were going to try to make it. Disappointed.

Update: against ALL odds, I found a store that actually sells it here in my country!! It was incredibly tough to find, but I'll go buy some tomorrow. Can't wait to have another go at the cheese I fell in love with two years ago when I visited Italy. Damn excited!

Had this for the first time tonight, it's no joke! I'm glad as well, since it's just readily available at the supermarket in my area, normally I'd think it would be a copout since a lot of the "artisan cheeses" I've seen are just uninteresting mass production lines. However, this one was more than interesting, and literally took my breath away at the first bite! Lot going on in this cheese.

i honestly think Stilton is the best of all blue cheeses, we have one at my work called Devils' Rock Blue Cheese, it's fairly good too, but just not made the same way. Stilton is the best for intense dreams if you eat it late at night. Shropshire is an interesting Blue Cheese, quite different from the rest. but not really a fan. Stilton is still the best i think.

I love this cheese. It is also available in my supermarket in Wisconsin, USA. If that rated 6 on Castello's intensity scale, can you imagine what a 10 would be? If the curd structure is that open on the 'rind' edge, do you think they either cut the rind off or cut the wedge out off the center of a large piece to appear to be cut from a small wheel?

The edge looks like it was the outer rind of the cheese, but it was very clean, unlike most blues that I make.

Ha, I think Castellos scale only goes up to six. For instance, their havarti is 1 and their dill havarti is like 2. You can see six dots on each label, but they're not all filled in, except for this cheese, the Danablu.

Danablue is the name. It is the same cheese as Rochefort, but it has to be called something else. I just tried to mix such a cheese in a pack of minced beef and make 4 fried beef paddies, hakkebøf, that was cheesy, I ate 3. I call it Hakke de Bløf.

I'm a blue cheese lover but this one is just a bit too salty & sharp - don't get me wrong I still like it but there are much nicer blues out there IMO. Blue Castello from this same company is phenomenal.

Good cheese sold here in deli 11.99 lb. If I had a complaint it is a tad on the salty side but still very good. Makes a great blue cheese salad dressing crumbles well enough just mix 1/2 cup mayo and 1/2 cup of sour cream with however much blue cheese you want. You can also add just a couple of dashes of lemon juice and some milk to make it spread easier.

I just made "Danbo" a couple weeks ago using the Cheesemaking.com recipe...no blue molds added at all. It gets washed in a sugar/b.linens brine. It stinks in a really good way. It's according to the website a Danish cheese, and I'd be interested to make it with blue molds next time....have to try the "plain" version first!

looks like you quite enjoyed that cheese, a bit afraid of blues myself. maybe when I can have cheese again I will have to be brave enough to give one a try. Great work. I guess rating each cheese on how good you think it is can be helpful, maybe ranking them form the one you like most to the one you like least, but you said you were doing a top 5 and a bottom 5 at the end anyway.

I highly recommend getting the Tasmanian Heritage Blue Brie to get you started on your blue cheese journey! Not overpowering and a great cheese.

Right now I'm on a diet that is working but doesn't allow for any cheese, strangely watching others make and eat cheese seems to be reducing my cravings for it

It's very good with the Danish rye bread, especially if you toast it (the bread!) a little. Or another sourish kind of bread. You might want to serve it with honey-pickled walnuts, or just liquid honey, or some blackcurrant jam... I'm Danish and I love it, it's always in my fridge. And have loved it since I was a kid (allthough Mum claimed I was a weird kid that also liked Brussels sprouts and celeriac), still I find a mature English farm-dairy Stilton superior... @Gavin, you mentioned Danbo - that's a completely different cheese
