Hi Dulce de leche is in Spanish and is pronounced "Dool-seh deh leh-cheh" and isn't the same as the Italian word Dolce pronounced "dowl -chay"

Argentine here! Historically speaking, Dulce de Leche was made for the first time in the Río de la Plata region, although a similar variant was first made in Indonesia. The original recipe contains whole milk, sugar, vanilla and baking soda. The taste is completely different to the one with condensed milk, you should give it a try! Anyways, I really liked the recipe and can´t wait to try it!!

Its actually not that hard to find real dulce de leche in London! There are many companies that sell Argentine products even door to door ☺️ I recomend La Serenisima.

Well, from what I understand variants of it were made it South East Asia, which then were brought to the Spanish Colonies in the Americas. And like many other things that can be traced to the Spanish influence in the region (like alfajores and empanadas) it is hard to trace the origin to one particular country in Latin America, as they all have legends about the origin of the dishes. But the version we have today and what the entire world now knows as Dulce de Leche, can be first traced back to colonial records in Chile. I agree with with Agus on her recommendation to try the original recipe or the many Argentinian brands that one can get in London. Although the condensed milk one is a nice alternative when one can't buy the real product (and it does the job well when one is home-sick ❤️).

I've actually tried that recipe with different kinds of milk, namely, cow's, goat's, and buffalo (we call the beast carabao in the Philippines). The differences were just subtle. The goat's milk one was slightly sour, while the buffalo one was just a tinge grassy (I can't find the proper word. Buffalo milk itself is reminiscent of hay and grass). I don't think, though, that the differences are pronounced enough to be noticed in a complex dish like cheesecake.

In the U.K. you can buy dulce de leche in Sainsbury’s. The brand they sell is Mardel. Much better flavour than cooking condensed milk.

I made my first ever trifle this year when I had a bit of a baking disaster.. I was making the Lemon Meringue cake and they got stuck to the tin! So couldn’t use it as a layer cake but made into a trifle with blueberries and raspberries!

Hey! Saw this comment and I used to be the same. What I do now is put a pot on the hob and turn it on to slightly heat… I don’t leave it on long… put a tea towel down and trun the pot upside down and then put the cheesecake on top for seconds and the butter in the base slightly loosens off enough for you to slide it off base. Obvs just repeat it if it’s not quite loosening. Hope this helps :-}

The last time I bought condensed milk (1 month ago) it was in a heavy plastic pouch. Because of Covid our groceries don’t seem to have the shelves stocked completely and all I could find was the pouch, also it was around Christmas so maybe that was also a factor. Hopefully the stores here aren’t switching completely to the pouches

It takes I and a half hours to boil the condensed milk and you can boil a few tins together and store them for another time

Omg I'm still on catch up binge watching and today I did this cheesecake BEFORE I'd even seen this video!! I did digestive biscuits instead and I had no idea the caramel was called this I've done this like my mum taught me and just called it Brown condensed milk!! I made this cake for my husband's birthday. Unfortunately, the dulce de leche gave off this syrup that then leaked through the cookie crust. It tasted delicious, but the soggy bottom made it all very unstable. I might just make my regular (baked) cheesecake next time, and put the dulce de leche on top after baking. The dulce de leche itself didn't separate, but its syrup bled through the crust.

Great recipe, thanks! Question: what's the reason you bake the crust rather than just chill it? And also, I've always added the butter straight after melting it, so was intrigued that it's better to let it cool slightly, why is that? I think I'll try this with biscoff myself 😁

pressure cook the condensed milk takes a far less time .. try it .. will save time and fuel or electricity.

lay down the tin in the cooker after removing the label . Submerge it in water fully . it must be submerged in water . then put on medium high flame until the first whistle and lower the flame to lowest.. let it cook on low flame for 15 to 20 mins . remove from flame. wait till the pressure releases and remove the tin immediately to avoid the condensed milk getting thick. within half an hour your dulce de leche is ready...

A word of warning, do not let the saucepan with the condensed milk tins boil dry. My sister worked in a bakery and the staff went for a smoke break and came back to caramel dripping off the ceiling

If you have an Instant Pot or pressure cooker, I heard that you can make dulce de leche in there in about 40 minutes...depending on if you open the can or leave it closed. A quick Google should bring something up for you. :) I don't think I've ever had dulce de leche, but Starbucks is using it in their Toasted White Chocolate Mocha as the 'toasted' bit of the sauce/syrup & I want to make my own, so I just investigated it & now you came out with this! It looks YUMMY. Have a great day! :)

Nestle make the caramel one now you don't have to do the can boil anymore, apparently doing it like we have been doing it for years is dangerous. I don't know how because I got taught how to do that at ten years old by my nan.

My doctor recommended cheesecake for a holiday desert. A lot of fat slows down the absorption of sugar. A diabetic would have to ‘budget’ the carb intake, though. You should talk to your mom. Note: I’d skip the dulche de leche cheesecake for New York style, or maybe chocolate, though. Of course, this is a high fat, high calorie desert! Make it for a crowd!

I think I would use Biscoff cookies as the creme bottom I don't think May personally would like the Oreo as I feel that chocolate would overpower the wonderful de leche
