Add 6 inches of oil, heat to 350 degrees… slowly drop the turkey with the gas on low… then turn up to boil point desired, and cover… watch…. It should fry at 4 mins per pound… so a 12 pound turkey needs almost 50 mins

i read a comment that said you need to turn the fire off and put the bird in water in the pot before you put oil in to see how much you need. well you don’t need to turn the fire off and don’t do that with the water because if you don’t completely dry the pot the water and oil mixed will make it explode. the thing you did wrong is dropping the turkey in that fast. when you put the turkey in it can take 1-3 minutes just to lower it into the oil. the second you put the turkey in it starts bubbling up and the oil rises due to the turkey. never and i mean never go over the fill line on the pot also follow the maximum weight requirements. most fryers say 18 pounds and follow it 19 should be safe but i wouldn’t even go to 20 really and definitely not above 20 my grandma bought a 23 pound turkey this year for me to cook and i was worried about it the whole time and i was right to be because i thought the pot might overflow and it almost did the oil was right at the top if i hadn’t put it in as slow as i did there would’ve been an explosion. this is something you need to be extremely careful with. so next time you do it make sure the turkey is completely dry and you lower that turkey into the fryer very slow, sometimes when lowering it you even have to pull it back out slightly due to the oil bubbling up too high.

It's no trouble, just use the pot to thaw the turkey, place the turkey in and fill till water covers the turkey, mark the level and let it thaw overnight still in the plastic. Remove from the plastic, remove giblets and neck from the cavity, pat dry with paper towels then coat with a little olive oil, season and inject. Fill oil to mark, make sure the pot is completely dry inside and heat to 350. Grab a shop glove or oven mitt and lower the turkey breast side up slowly into the pot Count like 2-3 Mississippi per inch as you lower it into the peanut oil until it reaches the bottom. If the skin is dry, the bubbling should be minimal, so don't freak out. There is a fried turkey calculator online to help calculate the fry time. A 12 lbs turkey should be done in 45 minutes. As a general rule I don't go above 12 lbs.

It's a slow process. Put the turkey in slowly. If it starts to bubble fast, pull. A little bit out and wait for the bubbles to settle then repeat. FYI, dont turn of the burner. Do as I said. The fire helps cook the turkey at it's best and crisps it up nicely. Turn it off after it cooks.
