Ingredients:
Cooking oil 1 cup
Onion 2 Large
Black Cardamom 2
Green cardamom 3,4
Cloves 6'7
Cumin seeds 1 tbsp
Cinnamon stick 1
Black peppercorn ½ tsp
Ginger garlic green chilli paste 2 tbsp
Tomatoes 4 Large
Yoghurt 1 cup
Salt 1 tbsp
Chilli flakes 1 tbsp
Biryani masala 2 tbsp
Boiled chickpeas ½kg
Water 1 & ½ litre
Green chilli 3,4
Rice (soaked for ½ hour) 1 kg
Biryani masala 1 tbsp
Directions:
In a pot,add cooking oil,onion & fry until golden brown.
In fried onion,add black cardamoms,green Cardamom,black peppercorns,cinnamon stick,cloves, cumin seeds,& mix well.
Add green chilli paste,ginger garlic paste & mix well.
Add tomato,yogurt,red chilli crushed,salt,biryani masala (2 tbs) & mix well.
Add little water & mix well,cover & cook on medium flame for 5-6 minutes then cook on high flame until oil separates.
Add boiled chickpeas & mix well.
Add water & mix well.
Add green chillies,mix well & bring it to boil.
Add soaked rice,mix well & cook on medium flame until water is reduced to 1 Cup (3-4 minutes)
Sprinkle biryani masala (1 tbs),cover with kitchen cloth or newspaper ,lid & steam cook on low flame for 15-20 minutes.
Serve degi chana pulao with yogurt raita,salad & fried onion.
