I've been having a blast playing with my new Nesco FD-75A dehydrator and your book, thanks so much for opening a whole new fun and highly economical world for me! This recipe was one of my first to try, and is a staple now! The storage technique I employ that you didn't touch on that I picked up from Backpacking chef is vacuum sealing stuff in big mason jars with oxygen and moisture packs. We hardly have room in the freezer, and I didn't want to invest in another vacuum sealer (my Foodsaver died years ago) and deal with vacuum bags, so this was an attractive idea. The vacuum sealer is just a $25 hand pump, and it works great! And while he recommends consuming it within a year, he's opened meals that were two years old stored this way that were still good and had hardly discoloured at all. I thought it was interesting that you still use your Nesco, even though you're lucky enough to have the Cadillac of dehydrators, an Excaliber. I'm really curious now, is there something about it that you feel is and advantage that you still use it?

Great comments and questions. I'll start with the Excalibur vs. Nesco (I intend to do a video on this). First let me say that the Nesco is an excellent dehydrator and is certainly the best value on the market. I will agree that the Excalibur is slightly better and is a 'Cadillac'. It seems to have better air flow and tends to dry things a bit faster. I also like the fact that it has a timer. But, one of the drawbacks is that the trays are flat and don't stack. This isn't a big deal if you run the dehydrator in your kitchen but I run my machines in the basement. That means making a number of trips and probably spilling some on the way. So for that reason I tend to go to the Nesco first. I got the Excalibur when I got serious about writing the book and figured I needed experience with at least two of the better makes out there. Regarding freezing vs. vacuum sealing, my wife and I live in a rural area with a large house garden etc. We have two chest freezers and despite being full of vegetables there is still lots of space for dehydrated meals. For folks without as much space vacuum sealing is the way to go for sure. I have a vacuum sealer and a million mason jars (we do a lot of canning too) but I haven't gotten into vacuum sealing in jars. I highly recommend it to folks without freezer space. I am working on a script for a video on fat in dehydrated foods and I think that also has a connection to freezing vs vacuum sealing. Anything with some/significant fat will last longer in a freezer. I need to get some of that mason jar vacuum sealer technology if for no other reason than to build my experience with it. Thanks again for the comment and am so happy you enjoy the book!

Your book has been a God send Kevin. Everything I've prepared thus far has been great and there are so many more I have yet to prepare. Feb/March are the months I turn our kitchen into a mass production dehydrating machine stocking the freezer with vacuum sealed meals to last May to late October for many trips. The best dehydrating cookbook out there in my opinion. Thanks for all your hard work to produce it as well as these "how to" videos which aren't exactly easy to produce either and take time an effort.

Kevin. Being a long time follower of your channel, your "Backcountry Eats" has been a lifesaver. I have been dehydrating meals for my trips for many years and tried a lot of different recipes. Your book however, has given me a lot more options now to try. Your 'Shepherd's Pie' & 'Butter Chicken' recipes have been a staple for me for all my trips in the last few years. Now in my mid '70's, and still able to get my canoe over my head, dehydrating my meals is a necessity for me now to help manage the weight of my loads. Thanks, and keep cooking. Peter

Really enjoying your channel Kevin and appreciate you making these videos. I have been dehydrating my own meals for a few years but can’t say I put much thought into them and I think the results show that. I never know it’s better to add my spices as a powder in the bag or cook them in the meals so I am looking to up my game here. I think you sell cook books and where can I buy one and have you ever tried using meat substitutes like a fake ground round or chicken to see how they dehydrate and rehydrate? I am a vegetarian and have been for 30 years but I want to replicate some of these recipes you have and not sure if the fake stuff will work. What do you think?

Thanks Cliff, my book is Backcountry Eats and you can find it here www.backcountry-eats.com/ 70% of the recipes in the book are vegetarian or vegan. On the spices I'd say it doesn't really matter, I have done both methods many times. I tend to add the spices earlier if what I am making is a stew that is supposed to simmer for a while. If I do I add about 1.5x the normal amount as some flavour gets lost in dehydration. I have tried meat substitutes and they tend to dehydrate and rehydrate fairly well. Thanks for the interest.

I just joined your fan club. Bought your book and the dehydrator arrives today. Question for you. How do I determine serving size for your recipes in your book?

Hi Shawn, thanks so much for purchasing the book. Check out the Meal Planning section (p. 50). To minimize waste I base everything on the dry weight of the meal and that will depend on who you are. For me a male in my early 50's I am good with about 130g. When I was younger I needed 150g. My smaller wife is in about the 100g range now. I give some tips on how to decide for yourself to get pretty close then you can adjust from there based on your preference. Good luck!

@@shawntonner3643 There is also a couple of large tables that will describe the caloric needs of a person working hard depending on their size, age and sex, you can work backward from there but for an average person I'd start with 125g per person and adjust from there. If they are a big young strong male then go to 150g. If they are a smaller older woman then you are at 100g. I did have one professional athlete (young, male, and strong) say that they preferred meals in the 200g range but I think that is a bit of an outlier.

Will this recipe rehydrate using a freezer bag technique? Any modifications?

It should work just fine with the freezer bag technique. I would add just a little more water than usual as you are going for a more soupy consistency. So, about 1" or 2cm above the top of the dry ingredients.
