Deli Style Roast Beef Sandwich Recipe | 2 Ways

Total time: 1 Hour, 30 Minutes (16-24 Hours for Sous Vide) + Rest Time
Ingredients
Lean Beef Roast | 3-4 lbs
Olive Oil | 1 tbsp
Salt | 1 tbsp
Pepper | 1 tsp
Garlic Powder | 1 tsp
Paprika | 1 tsp
Thyme | 1 tsp
Rosemary | 1 tsp
(Sous Vide Only) Liquid Smoke | 1/2 tsp
(Sous Vide Only) Worcestershire Sauce | 2 tsp
Directions
Oven Roast (Method 1)
1. Trim the roast of external fat.
2. Mix Olive Oil, Salt, Pepper, Garlic Powder, Paprika, Thyme and Rosemary into a paste, spread on roast.
3. Take a high heat pan and add a tbsp of neutral flavored oil. Heat on medium-high.
4. Sear on all sides for 30-45 seconds a side.
5. Place the roast and the pan into a 300˚F and roast until the internal temperature reaches 129˚F.
6. Remove from the pan and wrap in aluminum foil. Let rest for 10 minutes before placing in the fridge.
7. Let cool completely for several hours to overnight. Slice thin against the grain to serve.
Sous Vide Roast (Method 2)
1. Trim the roast of external fat.
2. Add roast to water-tight bag, along with Salt, Pepper, Garlic Powder, Paprika, Thyme, Rosemary, Liquid Smoke, and Worcestershire Sauce.
3. Seal the bag tight and cook for 16-24 hours at 131˚F in the sous vide.
4. Remove from liquid, open the bag, and drain the liquid. Pat the roast dry.
5. Sear the Roast as directed in steps 3 & 4 of Method 1.
6. Wrap in foil and let rest in the fridge overnight, slice thin against the grain to serve.
