Hi Amy I have question about Ruby chocolate. I love the flavor and color as well but so I found very difficult work with it, especially to make ganache. Not sure how make the ganache keeping nice texture as well the natural color ? Thanks 🥰

I'm sorry to hear you're struggling with the ruby chocolate. I actually don't work with it as I don't use couverture chocolate, I make my own. Have you tried going to the Callebaut YT page and seeing how they use it?

They can, but it can cause them to bloom due to the moisture that will accumulate. Even if they are in an airtight container. Best to keep them out and out of direct sunlight in a room no warmer than 22c.
