I felt like I was really honoring my home grown eggplants with this beautiful dish. I'm very glad that you mentioned the possibility of over-roasting the whole spices, as I chose to redo mine as they smelled bitter. I'm glad I did as the final taste of the sauce with its additions of panch phoron (a wonderful mix that I've added to simple sauteed veggies all summer!) and the spice blend is very delicious. I think that I will try a somewhat simpler version of this recipe, adding a combination of oven-roasted small crookneck zucchini, sliced eggplants, and peppers to the same wonderful sauce. Thank you so very much for sharing these wonderful flavours and techniques.

I usually tend to stay away from sugar. Yet when Bumbi says; “the sugar is optional” I’ve learned to always add it. That tiny bit of sugar adds such depth! Have a relaxing weekend Bumbi. 🌹

People underestimate the deliciousness of eggplant. I have a very good friend from Sicily who now lives here in the United States and he taught me how to make true Italian eggplant parmesan. I can't wait for me and my two girls to make your recipe. As a single dad my favorite thing to do with my girls is cooking

Panch phoron is my favorite too. I bought these eggplants from Costco. Last year Costco didn’t sell these but I was so delighted to see these again back on the shelves.

Would you mind sharing what type of oil you use and what type of red chili? I have arbol, reshampatti and Kashmiri. When it was almost done cooking in the video, I’m thinking, “boy, that would be so great on rice…” and you then said you loved it on rice. Haha! Can’t wait to try this one! Yummalicious

I usually do my regular cooking in Olive oil (not extra virgin). Since this is an achari recipe I used mustard oil as all achari related recipes are usually done with mustard oil in India. At the same time I can totally understand the concerns of use of mustard oil here in the West so I do not insist anyone to use it. You can use any oil of your choice. I use sunflower/avocado oil when it comes to deep frying.

Update: Yes I have used just salt alone does not go very well with the eggplant so I added the sugar at the end to adjust the flavor. It goes very well with the tomato's sourness. I do not have nigella seeds so I used dry oregano leaves as an alternative( Googled it and the search recommended it) to make panch pharon. After that is done, I started your Okra and potatoes recipe next. So for today, I will be enjoying two dishes.

Please help us make really DRY , really CRISPY , light and tasty pakoras that are like onion rings . Please give us an oil temp , its literally the only consistent method a broad audience can rely on with all different cooking appliances and methods , for some reason , no channels give us one ever. love the curries , going to try your dal with no pressure cooker soon , 45 mins for me isn't a lot of time to spend in a kitchen but i see the benefit of 10 minutes cook time.
