Khow suey, is a Burmese dish which is curried beef or chicken with coconut milk, served with Noodles and a variety of contrasting condiments. A squeeze of lemon also adds tanginess to khow suey.
Ingredients
500 gms Chicken Breast- Cut on 1 inch cubes
1 large stick Cinnamon - 8 cloves - 8 pepper corns
6 to 7 dried red chillies
2 medium onions - ground to paste
1 teaspoon garlic paste
1 teaspoon salt - 3/4 tea spoon turmeric powder
1/2 teaspoon kashmiri chilli powder
1 table spoon gram flour (Channa Atta)
1 cup coconut milk - 6 tablespoons oil
Condiments for Khowsuey
Noodles of any type
2 onions sliced and fried golden brown
2 boiled eggs cut in quarters - Chopped Coriander leaves
5 garlic cloves - sliced and fried golden - 5 green chillies chopped
1 bunch of Spring onions chopped - Lemon Slices
Method
Place a wok or kadai on high heat and add 6 tablespoons oil
Add to this 1 large stick Cinnamon, 8 cloves, 8 pepper corns, 6 to 7 dried red chillies and give it a stir
Add 2 medium onions ground to paste and fry for 2 minutes
Add 1 teaspoon garlic paste and fry this until it is creamish in color and oil leaves the sides
Add 500 gms Chicken Breast cut on 1 inch cubes and stir fry for 2 to 3 minutes
Add 1 teaspoon salt, 3/4 tea spoon turmeric powder,1/2 teaspoon kashmiri chilli powder and cook everything for another 3 to 4 minutes
Add 1 tablespoon gram flour or channa atta and cook further for 2 minutes
Add 1 cup coconut mil, 2 cups water and stir everything and bring to a boil
Cover and cook this for 15 minutes turning the heat down to medium low
Open after 15 minutes give it a good stir and remove from heat
This Dish has to be served with over Noodles and a lot of condiments like fried onions, boiled eggs cut in quarters, chopped coriander leaves,
golden fried sliced garlic, chopped green chillies, chopped spring onions and Lemon Slices
