This Brazilian-inspired recipe brings together tender chicken, vibrant bell peppers, and the unique taste of hearts of palm, all simmered in a rich sauce. Chicken Moqueca with Hearts of Palm
3 pounds of chicken thighs or drumsticks
5 tablespoons olive oil
1 1/2 teaspoon palm oil (optional)
2 1/2 cups hearts of palm
4 muddled garlic
Salt to taste
1 1/2 teaspoon Hot Hungarian Paprika
1 medium sliced onion
2 medium sliced bell peppers
Cilantro to taste
1 1/2 cups chopped tomatoes
Juice of 1 lime which I forgot to mention
How to prepare:
Start by seasoning the chicken with the muddled garlic, salt, Hot Hungarian Paprika and lime juice. Set aside for 15 to 30 minutes. Into a pot, heat up the olive oil and palm oil. Add the chicken and sauté for 8 to 10 minutes. Add the onion, bell peppers, tomatoes and mix well. Add the hearts of palm, coconut milk and mix well. Cover the pot and let it cook on medium for 35 to 45 minutes. Once it is done cooking, top it off with some more bell peppers, tomatoes and cilantro to your taste. Serve this over rice and bon appetite!

Moqueca de Frango com Palmito
1 1/2 kg de coxas ou sobrecoxas de frango
5 colheres de sopa de azeite
1 1/2 colher de chá de óleo de dendê (opcional)
2 1/2 xícaras de palmito cortado em rodelas
4 dentes de alho amassados
Sal a gosto
1 1/2 colher de chá de páprica húngara apimentada
1 cebola média fatiada
2 pimentões médios fatiados
Coentro a gosto
1 1/2 xícaras de tomate picado
Suco de 1 limão que acabei esquecendo de mencionar
Como preparar:
Tempere o frango com o alho amassado, o sal, a páprica húngara picante e o sumo de limão. Deixe marinando por 15 a 30 minutos.
Numa panela aqueça o azeite e o óleo de dendê Adicione o frango e refogue por 8 a 10 minutos. Acrescente a cebola, o pimentão, o tomate e misture bem. Adicione o palmito, o leite de coco e misture bem. Tampe a panela e deixe cozinhar em fogo médio por 35 a 45 minutos, mexendo de vez em quando. Depois de cozido, acrescente um pouco mais de pimentão, tomate e coentro a gosto. Sirva com arroz e bom apetite!
