Delicious Dum Biryani / Dum hydrabadi Biryani / Biryani
Dum Biryani is a popular Indian dish made with seasoned rice, meat (often chicken, mutton, or goat), and a blend of aromatic spices. The term "Dum" refers to the slow cooking method used to prepare the dish. Here's a basic recipe for Mutton Dum Biryani:
Ingredients:
4 cups Basmati rice soak for half an hour
1000 g mutton/chicken cut into pieces
4 large onions, thinly sliced diced with flour /rice flour
1&1/2 cup yogurt
2 tomatoes, chopped
4 tablespoons ginger-garlic paste
1/2 cup chopped mint leaves
1cup chopped coriander leaves
2 green chilies, slit optional
Whole spices (cinnamon 4 small stick , cardamom 2 big small 7-8 , cloves ,bay leaves 3 ,anis star 1 nutmeg flower strands 1 Cloves 7-8 shah jeer 1 tsp 1tsp black pepper )
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 tsp garam masala
lemon juice 1table spoon , keep the jest for Rice cooking
Salt to taste
Ghee or oil
some cashew's
Saffron strands soaked in warm milk (optional)
some orange and red colour (optional)
Instructions:
Wash and soak Basmati rice in water for about 30 minutes.
In Cooker take 2 tbsp of oil , ginger-garlic paste, , turmeric powder, salt, bay leaf and add mutton and fry for few mins a half cup of water and yogurt mix well and take 4 whistles till the mutton become tender
chopped mint and coriander leaves. Let it marinate for at least 1 hour.
In a large heavy-bottomed pan or pressure cooker, heat some ghee or oil. Add the sliced onions and fry until golden brown. Remove half of the fried onions and set aside for later use.
To the remaining oil roast the cashews , add the garam masala/ ginger garlic paste
add whole spices like cinnamon, cardamom, and cloves, and salt to taste. and tender mutton some onion fried yogurt let it cook for 5 mins
In a separate large pot, bring 3 litres of water to a boil. Add the soaked Basmati rice and cook until it's 70-80% done. Drain the rice and set aside.
In the same pot used for boiling rice, layer half of the partially cooked rice evenly. Sprinkle some fried onions, chopped mint, and coriander leaves over the rice.
Layer the mutton gravy mixture over the rice. Spread it evenly.
Top the mutton layer with the remaining rice. Sprinkle some more fried onions, mint, and coriander/cashews leaves on top.
If using, drizzle saffron-infused milk over the rice.
Cover the pot tightly with a lid and cook on low heat (dum) for about 10 minutes until the rice and Mutton are completely cooked and flavors are well absorbed.
Once done, gently fluff up the Dum Biryani with a fork. Serve hot with raita (yogurt sauce) or salan (spicy curry).
