Looks really good. I would probably lean more toward the stew consistency but either way I may put this on my list for a fall or winter weekend! 👍🏻

I like it. I make mine very similar, but buy whole chickens, cut it into parts and use what remains plus more carrots, onion and celery to make a stock. Takes longer, but most of the time is the broth simmering on the stove, so you don’t really have to stand over it.
