We love this crispy roll treat. And if you pick your Rice Krispies carefully you can make this recipe gluten free.
Recipe
Measure all ingredients before starting so you are set and ready to go. Remember you will need to move fairly quickly.
Roll Part
3/4 cup corn syrup
3/4 cup white sugar
3/4 cup peanut butter
2 Tablespoons butter/Margarine
4 1/2 cups Rice Krispies (if you want this gluten free make sure the krispies you are choosing are in fact gluten free! The Rice Krispie brand is NOT gluten free!)
Filling
1 1/2 cups icing sugar
2/3 cup cocoa powder
6 Tablespoons butter/margarine (melted)
2 Tablespoons milk
Grease your cookie sheet.
Mix icing sugar and coca together. Set aside.
Cook corn syrup and sugar on low/medium until it begins to bubble. Turn down and add peanut butter and 2 TBS butter. Stir until all melted together. Remove from heat and add Rice Krispies, stir together. Spread on greased cookie sheet. Pack it down well.
Grab icing sugar/cocoa mix pour in melted butter/margarine and mix. Add milk and mix some more. Spread a thin layer over the Krispie mix (leave some for the topping).
Roll the two together like a log. Chill in the fridge. Squish up as needed.
Remove and let warm up before slicing. Slice and store as needed.
