We have a beautiful lemon tree and is full of lemons so I decided to make this delicious Lemon Coffee Cake. It just the right amount of sweet with a refreshing lemon flavor. It is one of my families favorites.

Lemon Coffee Cake Recipe

4-5 TBS Lemon Juice

Instructions
Preheat Oven to 350 Degrees
Butter 9" x 9" baking pan and set aside.
Combine 1 cup flour, 1/2 cup sugar, 2 TBS brown sugar and 5 TBS melted butter. Stir until completely combined and set aside.
Zest 3 TBS of lemon and squeeze 4-6 TBS of lemon juice. Set aside.
In a medium bowl whisk together 2 1/2 cups flour, 1 1/2 tsps baking powder, 1/2 tsp baking soda and 1/4 tsp salt. Set aside.
In a large bowl mix together 2/3 cup of softened butter, 1 1/4 cups sugar and 3 TBS of lemon zest on low. Add 2 tsps vanilla extract and mix. Mix in 3 eggs one at a time. Add 3 TBS lemon juice and 1/2 cup Greek yogurt mix until combined. Add 1/2 of the flour mixture. Mix until just combined add 1/4 cup milk and remaining flour on low speed.
Pour batter into prepared pan and spread evenly across. Spread crumble on top. Press gently into batter.
Bake for 35-45 minutes at 350 degrees. Check for doneness at 35 minutes. If not done add 5 minutes at a time/ If your coffee cake is starting to brown on the edges loosely cover with aluminum foil.
Completely cool Lemon Coffee Cake on a cooling rack.
While you are waiting for your Lemon Coffee Cake to cool make your glaze.
Start with 1 cup of powdered sugar, add 1 TBS Lemon Juice stir until powdered sugar is dissolved. Add more powdered sugar and more lemon juice to achieve the consistency you desire. Add more powdered sugar for thicker glaze. Add more lemon juice to make it thinner.
Drizzle glaze on top of completely cooled Lemon Coffee Cake.
