We’ve all done it. It’s 3a.m., the club is closed, there are no restaurants open anywhere. Then it happens, you see those faint little lights on the street corner in downtown Los Angeles. There’s a little old woman standing behind a portable flat top grill, and she is making the best hot dogs you have ever tasted. Well, it could be the alcohol talking or maybe it’s because it’s the only food in miles and you are starving. Let me tell you, they are awesome even when it isn’t 3am. Make these a few times and you’ll think you’re on a street in L.A. somewhere. They are simple and they are tasty.

Ingredients

4 Hot Dogs
4 Hot Dog buns (seeded is great)
4 slices of bacon
1 Red bell pepper
1 Green bell pepper
1 White or brown onion
2-3 Serrano peppers (get the ones with the scars on them, much better flavor)
2 tbsp Canola or Vegetable oil
Salt, Pepper, Garlic powder (to taste)
Mayonnaise
Ketchup (Catsup)

Directions

1. Julienne all the vegetables (peppers & onion).
2. Wrap bacon around the hot dogs diagonally.
3. Heat up a large skillet to med high heat and add 1-2 tbsp. of the oil.
4. Once a light smoke appears on the skillet, add the vegetables. After about 5 minutes into cooking add seasonings. **Remember to open a window and turn on a fan, the serrano is going to let off some pretty potent capsaicin.
5. Heat a second skillet up to med-high and cook the bacon wrapped hot dogs. Turning as needed so they don’t burn.
6. When the hot dogs are done, the peppers and onions should be also.
7. Optionally, you can toast the hot dog buns in the bacon grease 😉

Assembly

1. Liberally add mayonnaise to the buns.
2. Add hot dog to each bun.
3. Cover with peppers & onions.
4. Top with ketchup and more mayonnaise.
