If someone were to insert a 6 inch metal rod into a rock, would this stuff be strong enough to hold human beings (so anywhere from 120-350+lbs)??

For natural stone anchorages, Hilti does not have specific test data to support anchoring into natural stones base materials due to the variability of the characteristics of the rock including but not limited to compressive strength, slake durability, jointing, degree of weathering, as well as the drilling method. In addition, there are no formal qualification tests that can be referenced to test anchors into natural stone base materials. With that being said, customers have used true epoxy anchors (ex. Hilti HIT-RE 500 V3) in the past based on their design engineer's judgment; however, site-specific testing is recommended to evaluate the anchor system due to the lack of data.
