The flavors from the custom dry rub, cedar planks, and mesquite chip smoke all combine to make something I like to call "Heaven on Earth." Dry Rub Recipe :
2 Tbls Kosher Salt
2 Tbls Brown Sugar
1 Tbls Black Pepper
1 Tbls Garlic Powder
1 Tbls Dried Basil
1 Tbls Paprika
1 Tbls Dried Tarragon
Salmon Recipe :
1. Soak cedar planks and wood chips for at least 1 hour.
2. Season salmon on cedar plank with Dennis' dry rub recipe.
3. Tuck salmon in so it is all the same thickness.
4. Place cedar wood chips in smoker box and put on grill on direct heat.
5. Place planked salmon on opposite side of grill in indirect heat for 15 minutes before moving to direct heat for 5 minutes.
6. Close lid and let the smoke do the work.
7. Enjoy!
Dill Sauce Recipe :
1. Mix 1 cup mayo with 1 cup yogurt.
2. Chop dill and chive.
3. Add 2 Tbls dill and 2 tbls chive to mayogurt.
4. Add 1 Tspn black pepper.
5. Add salt to taste.
