Today I tried out a new cheesecake dessert idea using Maltesers (Whoppers), caramel, and chocolate ganache.
If you like Maltesers (or Whoppers) then I think you’ll like it!
Ingredients to make 3 x 5-ounce (150 ml) dessert cups:
Maltesers or Whoppers - 1 cup / 2.8 ounces / 80 grams plus 9 extra pieces for decoration
Milk chocolate - 3.5 ounces (100 grams)
Soft cheese - 7.5 ounces / 210 grams
Caramel sauce or Dulce de Leche - 3.5 ounces / 100 grams plus 1 heaped tablespoon
Unsweetened whipping cream - 1 cup / 135 ml
Method:
Whisk together the cream cheese and caramel sauce.
Add ½ a cup of whipping cream and whisk until it's thick enough to hold soft peaks.
Put this mixture into a piping bag and set it aside.
Crush the Maltesers (or Whoppers) into crumbs using a food processor then divide them into 3 dessert cups (save 3 or 4 teaspoons for decoration later.)
Press the crumbs into the cups - I use the end of my rolling pin.
Next, chop the chocolate into small pieces so it will melt easily and pour on ½ cup of hot (but not boiling) cream. I heated mine in the microwave but you can heat it on a stove (hob).
Stir until the chocolate has completely melted to make a nice, smooth ganache, and then whisk in a heaped tablespoon of caramel before transferring it to a piping bag.
Pipe the caramel chocolate ganache over the crushed Maltesers and allow it to cool (20 minutes in the fridge will speed this up).
Pipe caramel cheesecake mixture over the ganache layer, almost to the top of your dessert cups, and level it out with a spoon.
Add a final layer of ganache to each dessert, sprinkle on the saved Malteser crumbs, and then top each one with Maltesers.
Refrigerate for 1 hour before serving.
