Dhivehi Bodu Gulha
Ingredients:
• 2 1/2cups flour
• 2 tbsp. oil (for the dough)
• 20 tbsp. warm water
• 1 onion
• 1 smoked tuna or tuna can
• 1 tuna can
• 1 lime (or to taste)
• 1 chilli (or to taste)
• 8 curry leaves or 11/2 tsp paste
• ½ tsp. grated ginger
• ½ cup grated coconut
• ¼ tsp. turmeric powder
• 1 tuna can large
• Salt to taste
• oil for frying
Instructions:
-Slice the onion, githeyo mirus and curry leaves thinly if using.
-Mix smoked tuna , chilli and ginger in mixer.
-In a bowl, mix the sliced onions together with the lime and curry leaves.
-Drain the tuna can and mix with the rest of the ingredients.
-Add salt to taste.
-Make balls from the mixture
-Take a small dough piece and roll it into a ball and then flatten it.
-Place tuna balls in the piece of dough. close it and roll it into a ball.
-Repeat until you run out of dough and tuna mixture.
-Heat the oil in a pot.
-When frying, keep the heat on high.
-Fry the gulha until they take on that nice golden colour. Ensure that all the sides are fried.
Dough
-In a bowl mix together the flour and the salt. Add the oil, and knead the dough while adding water.
