We all MUST wash and clean our hands before cooking. Every chef uses their hands to mix, you never go to see the top chef in 6 stars hotels, they even use barehands to mix salad, take cooked meat and arrange on the plate before they served and the price is sky high ! I don't quite like the idea to use hand to touch cooked food or salad, but raw ingredients is ok as it is not cooked.
