CARROT CAKE
100 g of shredded carrot
160 g of oats
70 g of DIESEL French Vanilla protein powder
300 g cottage cheese 1%
1 tsp. Baking powder
1 tsp. of cinnamon
½ tsp of nutmeg
67 g of banana
40 g of walnuts
200 g of almond milk
ICING
200 g of Greek Yogurt
50 g Swerve icing sugar
100 g of light cream cheese
INSTRUCTIONS
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine all cake ingredients except for the shredded carrots and walnuts. Do not add these yet.
3. Using a hand blender, blend the mixture until it is smooth and well combined.
4. Gently fold in the shredded carrots and walnuts by hand, ensuring they are evenly distributed throughout the batter.
5. Line a small square baking dish with parchment paper.
6. Pour the batter into the prepared dish, spreading it evenly.
7. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
8. Remove the cake from the oven and let it cool completely in the dish.
9. While the cake is cooling, prepare the icing by mixing all the icing ingredients together until smooth.
10. Once the cake has cooled, spread the icing evenly over the top of the cake.
