Another great video and a delicious looking rack of ribs. If you haven’t yet, next time you make that mop sauce with the chunks of mango. Take a stick blender to it after you finished for a little dipping sauce if you wanted.

Instead of habaneros, get a bottle of crushed Scotch Bonnets. They have round about the same heat as habs, but there's a sweetness to it. I got into them after watching some Jamacian cooking channels.

Definitely going to have to try that rub and mop sauce!! What's the distance between your coals and the grill grate? I'm thinking about getting an extension for my Weber that will give me about 1 1/2' between.....really curious about the direct heat flavors! Great video, as always!

I did smoked mango habanero spares last Saturday. I used the buffalo wild wings sauce. They were quite tasty! I need to do some direct heat ribs.

Peach habanero sounds good. how far are ribs from coals? just comparing with my Oklahoma Joe's Judge ...I also have a skin on pork belly I want to try too...any pointers would be appreciated....thx....love the direct cooking videos...

Man those look tasty!! Just curious, how do you wash your mop? I am afraid to use soap, but also don’t want to leave anything behind.

I wring it out really well under water and then use dawn dish spray. Wring it out again and then run it through the dishwasher. The drying cycle doesn’t fully dry the mop so I hang it on a kitchen cabinet handle to finish drying. I’ve never had any issues with soap flavor doing it that way
